Simply calories.   Chocolate, rum and raisin mousse so wicked that you might as well slap it straight on your thighs.   This delicious pudding makes it too easy to be naughty.

Hosting a lunch to celebrate multiple birthdays and wedding anniversaries amongst us, this spectacular cake-stand did the job with panache.

We were all the lucky recipients of this perfect dessert for those gatherings when you need to prepare well ahead.   Another Navy veteran, Linda, had whipped it up for us:

1 cup raisins

2 tablespoons rum

225g milk chocolate

175g cream cheese

2 tablespoons caster sugar

300ml double cream

Grated Dark chocolate to decorate (optional)

Soak raisins in rum.

Melt chocolate and allow to cool a little.

Beat cheese and sugar together.

Whip cream to soft peak.

Fold all together and place in serving dishes before chilling in the fridge until firmer.

Decorate just before serving.

My Tips:

Linda suggests that this serves 4 but smaller portions for more alongside some fresh fruit might be better for your figure!
