Cucumber soup (gazpacho style)

Ingredients:

5 small or about 1.5 large cucumbers, chopped.

3 spring onions, chopped.

3 small cloves garlic, chopped.

30g sherry vinegar.

30g olive oil.

30g dried bread.

2g salt.

3g ground black pepper.

Method:

Mix the ingredients in a lidded container and chill overnight.

Blend to a smooth liquid and return to the fridge before serving.

My Tips:

A perfect soup if you have a glut of home-grown cucumbers.
