3 litres Apple Juice
1 Kg Honey
2 Tablespoons Lemon Juice.
Yeast nutrient/Yeast


Bring the apple juice to the boil and simmer for a few minutes, stir in the honey, bring to the boil again simmer for 5 minutes.   skimming off any scum.

Cool quickly if possible (put pan into sink and fill with cold water 2/3 times)

Pour cyser into demijohn

Top up with boiled water if necessary to 1 gal mark, add the 2 Tablespoons of Lemon Juice, add yeast nutrient and yeast.

Leave in a warm place till it stops fermenting which can take a few months .

When stopped let it settle and rack it to aid clearing have to do this a few times)
