Ingredients:

125 g butter

125g caster sugar or honey

150g ground almonds

50g plain flour

3 eggs, beaten.

1 teaspoon vanilla extract (or almond extract)

Flaked almonds

Method:

Beat the butter and sugar, beat in the eggs, fold in the ground almonds, flour and extract plus one tablespoon of flaked almonds.

Place in container (ramekin, dish, cooked pastry tart case) and then press fruit into mix and scatter over remaining flaked almonds.

Bake in pre-heated oven 180c/Gas 4 for 25-30 minutes.

Cook 180C/gas 4 for 25-45 minutes depending on size.
