Garlic mushrooms with spinach and courgette

Ingredients:
1 tablespoon olive oil.
At least 250g mushrooms, trimmed and sliced.
2 cloves garlic, peeled and chopped.
1 courgette, trimmed and “sharpened”.
1 Bag spinach leaves, washed.
Method:
Heat the oil in a large frying pan before adding the mushrooms and garlic to cook for a few minutes.
Add the courgettes and drained spinach and continue cooking until the leaves have wilted.
Serves 2.
