Ingredients:

700g blackberries.

4 fl

oz water.

Juice of half a lemon.

1lb honey for each pint juice.

Method:

Heat the blackberries , water and lemon juice in a pan to a gentle simmer for 5 minutes.

Allow to cool and then strain into a bowl through a jelly bag or muslin in the fridge for 24 hours.

Measure the strained juice into a pan with the appropriate quantity of honey.

Bring to a simmer for about 10 minutes to reach setting point (106C).

Pour into warmed sterilised jar(s).

My Tips:

Add the juiced lemon half to the blackberries to get the most out of it.

Put the washed jars in a low oven during the final simmer.

Simply multiply all the ingredients if you have a bigger quantity of blackberries.
