Honey and Ginger cookies
1 Flat teaspoon (1g ground ginger
125g porridge oats
100g self raising flour.
40g finely chopped stem or crystallised ginger
Cream butter and sugar
Add all the other ingredients to make a smooth mix.
Divide into 16 round balls and place on parchment-lined tray(s).
bake at 170c fan or Gas 3 for 17 minutes.
A heaped teaspoon of ground ginger is delicious but rather overwhelms the honey flavour.
