Ingredients:
125g Butter.
125g Honey (or soft dark brown sugar).
3 tablespoons honey (or syrup if using sugar).
250g Porridge oats.
1 teaspoon baking powder.
1 handful dried fruit.
1 handful sunflower seeds.
1 handful pumpkin seeds.
Method:
Melt the butter and honey in a pan then add the remaining ingredients and mix well.
Spread the mix into a small, lined baking tray.
Cook for 25-30 minutes in a pre-heated oven 165C, Gas 3.
Cut into squares in the pan and allow to cool before re-cutting and removing.
My Tips:
I used an oat and wheat bran mix for extra roughage.
The dried fruit and seed combinations depend entirely on your taste and what’s available.
I cut the flapjacks in the tray after 25 minutes and returned it to the switched-off cooling oven.
