Quick Strawberry compote

1 punnet of strawberries, hulled and quartered.

½ tablespoon caster sugar.

Squeeze of lemon.


Place all the ingredients in a pan and warm through until sugar has dissolved. Cool.

My Tips:

I use the pointed end of a classic potato peeler to remove the hull and stalk.  Some people push a straw straight through the strawberry to remove the core.

This simple strawberry sauce can work with many different desserts.
