Ingredients:
Dried rosemary leaves.
Dried thyme leaves.
Dried chillies, de-seeded.
Garlic powder.
3-4 Potatoes, washed and cut into 50mm slices.
Salt and pepper.
1 tablespoon Olive oil.
Method:
Grind the herbs, chillies and garlic powder together to make a savoury powder.
Place the potato slices in a bowl with a teaspoon of the herb mix, a good grind of black pepper, a teaspoon of salt and the oil. Roll the potato slices to ensure every surface is covered.
Spread the potato slices on oven trays lined with parchment paper.
Cook in a pre-heated oven 180C, Gas 4 for 25, turn the slices over and cook for a further 20 minutes.
My Tips:
This savoury mix is an excellent way of using herbs and chillies from the garden. It keeps well in a lidded jar.
