It may be only today but I’ve got a great new and incredibly simple lemon cordial to share:.
1 lemon.
60g honey (or granulated sugar).
1 mug of boiling water.
Using a potato peeler, peel skin off lemon and place in a lidded heat-proof container.
Add honey or sugar and boiling water, cover and leave overnight.
Next day, remove peel and add lemon juice.
Keep in the fridge and dilute with (fizzy) water when the next hot day arrives!
My Tips:
I make larger quantities and pour into old-fashioned lemonade bottles. Place the bottles on a silicone mat or folded tea-towel in a large pan and cover with water. Bring to a simmer for 45 minutes to “bottle” so that the cordial will keep longer out of the fridge. No guarantees as to how long!
