Christmas (or Thanksgiving) made Easy.

If this blind veteran can do it, so can you!  For a glorious and relaxed traditional Christmas lunch, here are some incredibly straightforward recipes and the cooking countdown  that will make those festive celebrations a breeze.

Had a long, busy morning last week: 2 big Christmas puddings and 21 little ones (they will sit in a cool cupboard for up to a year); braised red cabbage (in the freezer for the big day); pork rillettes (a sort of bottled pate for entertaining); loaf and 6 loafettes; fruit salad compote;  weighing out for Christmas cakes (make good  gifts too).

The sous-chef just loves his Christmas puds so I try to make enough to last the year – one small one is enough for two of us for lunch.
