Lamb tajine is one of the easiest dishes to make, freeze in portions and bung in the microwave when the weather is really cold and miserable – just like last weekend.
With 1.5kg lamb, I created 18 meals. Thanks to local “Dave the Butcher’s” in Highlands Road, the meat was already cubed for me and they supplied all the fresh vegetables. There were just the spices, tinned tomatoes and chick peas to add.
On a late autumn afternoon, chopping the vegetables to the gentle drone of the radio was soothing. Early next day, vegetables and meat sauteed, tins added and the whole huge pot went into the oven on its lowest heat for about 8 hours. Orange zest and juice were finally added before potting up and freezing. Delicious meals for weeks and hardly any effort!
